For several months this year we were not able to go out to eat at restaurants.  Our diet was very restricted.  We had to come up with clean recipes for the food we often had when eating out and about.  We came up with some great replacement recipes and this is one of them!  
Smashed Chicken Avocado Bacon Burger
My kids missed eating out desperately, especially our trips to Red Robin.  Who doesn't LOVE burgers and fries, right?  So to replace their delicious Chicken Bacon Avocado Burgers we came up with our own, but I think we made it even better!  Our dilemma was how we would make a huge fat chicken breast juicy and delicious like they do at the restaurant.  We came up with a breaded (paleo & gluten free) smashed chicken breast which is incredible.   Here's the recipe. 

Ingredients

SMASHED CHICKEN
4 boneless skinless chicken breasts
1/2 cup of coconut flour
1 tbsp of kosher salt
1/2 tsp of garlic powder
freshly ground pepper

1/2 lb bacon (we always fry up extra to make lardons for salads) 
1 head butter lettuce (or whatever large leaf lettuce you like)
1 large tomato
8oz+ guacamole


This should be enough to make 4 burgers, or more if you have littles like we do!

Directions

  1. Fry up bacon to your liking (crispy or .... not so crispy).  
  2. While the bacon is cooking, mix together the coconut flour, salt, garlic powder, and pepper in a 9x9 glass pan to make a "breading". 
  3. Once your bacon is done set aside, but leave the bacon grease in the pan on medium heat.
  4. Tenderize each chicken breast with a meat tenderizer to about 1/2" thick.  
  5. Individually place each chicken breast in the baking dish to coat both sides in "breading". Once coated, fry it in pan with bacon grease, over medium heat. Cook chicken 4-6 minutes on each side (smashed chicken cooks faster). If the pan is big enough, you can do more than one breast at a time. If you need to cook up a couple more breasts, you can melt 2 tbsp of lard or fat of choice and cook it just as the first batch.
  6. When the chicken is about done, place a leaf or two of the lettuce on a plate. Layer some guacamole, tomato slice, bacon, chicken breast, and another leaf or two of lettuce.
